      <description>&lt;p&gt;&lt;font class="size_5"&gt;Adam's Super Pancake/Waffle Extravaganza&lt;/font&gt;&lt;/p&gt;&lt;p&gt;&lt;img src="http://farm1.static.flickr.com/79/277120166_4727af73cc_d.jpg" alt="" mce_src="http://farm1.static.flickr.com/79/277120166_4727af73cc_d.jpg"&gt;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;br&gt;&lt;font style="font-weight: bold;"&gt;Simple Version:&lt;/font&gt;&lt;br&gt;&lt;br&gt;&#190; cup shredded coconut, unsweetened&lt;br&gt;&#190; cup ground buckwheat*&lt;br&gt;&#189; cup almond meal (Trader Joe's is the hookup for this stuff, or ** )&lt;br&gt;2 big pinches of salt&lt;br&gt;&#189; t baking soda&lt;br&gt;1 t baking powder&lt;br&gt;2 eggs&lt;br&gt;2 cups milk or milk substitute&lt;br&gt;&lt;br&gt;Add all the dry stuff, mix it, then add the eggs and milk, and mix.&lt;br&gt;&lt;br&gt;* I grind the coconut and buckwheat together in a coffee grinder or food processor until it's like a flour... you could use buckwheat flour and finely shredded coconut, too &#8211; it's a matter of texture, and preference.&lt;br&gt;Also, unroasted buckwheat is best (it's green, instead of brown), but can be harder to find.&lt;br&gt;** You can grind the almonds yourself, but TJ's stuff is el primo.&lt;br&gt;&lt;br&gt;&lt;font style="font-weight: bold;"&gt;Taking It To The Next Level:&lt;/font&gt;&lt;br&gt;&lt;br&gt;What you've got is four components, each with a lot of latitude as to how they come together...&lt;br&gt;&lt;br&gt;1: Base (2 cups)&lt;br&gt;2: Leavening (~2-3 teaspoons)&lt;br&gt;3: Eggs (2)&lt;br&gt;4: Liquids (enough to make the consistency right)&lt;br&gt;&lt;br&gt;1: Base Options (mix and match however you like)&lt;br&gt;low-no gluten: coconut, buckwheat, almonds, pecans, walnuts&lt;br&gt;gluten: oats, wheat flours, etc.&lt;br&gt;&lt;br&gt;I often throw in cinnamon, too.&lt;br&gt;&lt;br&gt;2: Leavening&lt;br&gt;Baking powder and baking soda, basically. Feel free to experiment w/ proportions... I haven't noticed a big impact either way w/ these.&lt;br&gt;&lt;br&gt;3: Eggs&lt;br&gt;1 egg for each cup of Base.&lt;br&gt;&lt;br&gt;4: Liquids&lt;br&gt;Here you can get really creative... rice milk, almond milk, coconut milk,&amp;nbsp; cow milk, applesauce, yogurt, cream, buttermilk, apple juice... sky's the limit, really.&lt;br&gt;&lt;br&gt;That said...&lt;br&gt;&lt;br&gt;&lt;b&gt;Here's my favorite way to make it:&lt;/b&gt;&lt;br&gt;&lt;br&gt;1 &#189; cups of coconut and buckwheat (ground up together)&lt;br&gt;&#189; cup almond meal, with a little pecans thrown in, and maybe a little whole wheat flour&lt;br&gt;pinch of salt&lt;br&gt;cinnamon&lt;br&gt;2 eggs&lt;br&gt;a big splash of coconut milk&lt;br&gt;another big shot of applesauce&lt;br&gt;rice milk until the consistency is right&lt;br&gt;&lt;br&gt;Obviously, I don't measure much... and if the kids want waffles sometimes, I just make it a bit runnier. &lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;font style="font-weight: bold;"&gt;Last, but not least:&lt;/font&gt;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;Top it with whatever you want - butter, honey, jam, syrup, apples, coconut syrup... have fun!&amp;nbsp;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;&lt;p&gt;&lt;font class="size_1"&gt;(Image via &lt;a href="http://flickr.com/photos/digiyesica/277120166/" target="_blank" mce_href="http://flickr.com/photos/digiyesica/277120166/"&gt;digiyesica&lt;/a&gt; on Flickr)&lt;/font&gt;&lt;/p&gt;&lt;p&gt;&amp;nbsp;&lt;/p&gt;</description>
