Adam's Super Pancake/Waffle Extravaganza

Simple Version:
¾ cup shredded coconut, unsweetened
¾ cup ground buckwheat*
½ cup almond meal (Trader Joe's is the hookup for this stuff, or ** )
2 big pinches of salt
½ t baking soda
1 t baking powder
2 eggs
2 cups milk or milk substitute
Add all the dry stuff, mix it, then add the eggs and milk, and mix.
* I grind the coconut and buckwheat together in a coffee grinder or food processor until it's like a flour... you could use buckwheat flour and finely shredded coconut, too – it's a matter of texture, and preference.
Also, unroasted buckwheat is best (it's green, instead of brown), but can be harder to find.
** You can grind the almonds yourself, but TJ's stuff is el primo.
Taking It To The Next Level:
What you've got is four components, each with a lot of latitude as to how they come together...
1: Base (2 cups)
2: Leavening (~2-3 teaspoons)
3: Eggs (2)
4: Liquids (enough to make the consistency right)
1: Base Options (mix and match however you like)
low-no gluten: coconut, buckwheat, almonds, pecans, walnuts
gluten: oats, wheat flours, etc.
I often throw in cinnamon, too.
2: Leavening
Baking powder and baking soda, basically. Feel free to experiment w/ proportions... I haven't noticed a big impact either way w/ these.
3: Eggs
1 egg for each cup of Base.
4: Liquids
Here you can get really creative... rice milk, almond milk, coconut milk, cow milk, applesauce, yogurt, cream, buttermilk, apple juice... sky's the limit, really.
That said...
Here's my favorite way to make it:
1 ½ cups of coconut and buckwheat (ground up together)
½ cup almond meal, with a little pecans thrown in, and maybe a little whole wheat flour
pinch of salt
cinnamon
2 eggs
a big splash of coconut milk
another big shot of applesauce
rice milk until the consistency is right
Obviously, I don't measure much... and if the kids want waffles sometimes, I just make it a bit runnier.
Last, but not least:
Top it with whatever you want - butter, honey, jam, syrup, apples, coconut syrup... have fun!

I keep thinking about new variations/additions as I'm floating through the kitchen; one of my favorites is to add lemon zest (around ½ lemon for 2 cups of base). Have fun experimenting! Reply...
