judibugs Special Spaghetti Sauce
Ingredients:
- 5 links Hot Sausage
- 1/2 - 1 lb Chunk Pepperoni
- 2 lg cans Tomato Sauce (or a bunch of fresh ones)
- 1 lg can Diced Tomato
- Seasoning, 1/2 - 1 cup italian, a pinch of Thyme, 1 tsp sage, 1/2 tsp salt, 1/2 tsp pepper, 2 squirts of worcestershire sauce, 1 TBS Sugar, and 3 cloves of garlic(dice them)
Start browning the sausage whole till almost done, add the diced garlic, now add the chunk (bite size) pepperoni. Go ahead and slice the sausage and put back into pan. After cooking the sausage, pepperoni, and garlic for appox. 5 - 10 minutes, strain grease and add all meat with garlic to crockpot. Add the sauce and seasoning and simmer all day.
The sausage will release some hot into the entire sauce and the pepperoni will also.
This is served best on a bed of Vermicelli and garlic bread on the side.

Hi, Yes you can make it in larger or smaller portions. I must tell you though, When I make it, I do not measure the seasoning. I simply sprinkle until I think it's right. Those measurements should be pretty close. I highly reccomend tasting and tweeking till it's how you like it.

Hi,
Thank you for the compliment, and ya, you'll like this sauce. As for simmering instead of crockpot,,,,,,,,well,,,,,,,,,,letting it simmer for 3 hours if not more helps the hot come out of the sausage and the pepperoni also adds a particular flavor to the sauce itself. You can do it the way you suggested, it just won't all blend together as well. Reply...

the recipe sounds good. i'll have to try it soon. can you avoid the crockpot and just add everything to a pot that only simmers for a little while? Reply...
