Ingredients 1 lb floury potatoes peeled and cooked 1/2 tsp salt 2 oz butter 4 oz Self Raising Flour
Preparation
Mash potatoes, add salt and butter and flour to give a stiff mixture. Turn out on to a floured surface, knead lightly and roll out to a thickness of half an inch Cut into triangles and cook on a hot grased griddle for 4-5 minutes on each side. Serve hot. You can substitute part of the potatoes with other vegetables (for example carrots, spinach, red cabbage, turnips, peas) and have technicolor scones! They make a great side dish for meat courses.

Do the veggies need to be cooked and mashed too, or can you just add finely grated raw veggies? Reply...

That's a good question! I usually cook and mash everything because the time the scones spend on the griddle is really little and not every veggie can be eaten raw, but you can give it a try, it shoul work well with carrots, for instance. Thanks for the new idea ;) Reply...
